CARAMEL FURANONE , also called sugar lactone or 3-hydroxy-4,5-dimethyl-2(5H)-furanone, is well recognized for having a strong perfume that is similar to that of fenugreek, angelica, cherries, and caramel. It is suggested that this component be used to flavor coffee, berries, strawberries, and sweet desserts.
