LACTOMAX PRIME - PROZYN

LACTOMAX PRIME - PROZYN is a high-performance, concentrated, and purified lactase produced by a classic strain of microorganism, which hydrolyzes the lactose present in milk and its derivatives, producing D-glucose and D-galactose. LactoMax® Prime can be used to produce lactose-free dairy products, such as milk, cheeses, fermented foods, cream, butter, among others. It can also be used to improve the texture of ice creams, dulce de leche, and fillings. LactoMax® Prime optimizes the production of these lactose-free products, reducing hydrolysis time and/or enzyme dosage.

Dosage
  • The ideal dosage of LactoMax® Prime may vary according to the process parameters (time, temperature, pH) and the desired degree of hydrolysis.
  • For initial tests, the recommended dosage is 0.025 to 0.075% of LactoMax® Prime at temperatures between 5 - 8 °C for 12 to 24 hours, to obtain lactose-free milk.
  • For yogurt, the dosage should be from 0.018 to 0.030% at temperatures of 40 - 42 °C for 2 to 4 hours to obtain a lactose-free product.

Storage Condition

LactoMax® Prime should be stored in a cool and dry place, protected from light, in a properly closed package, at temperatures between 1 and 10 °C. Under these conditions, the shelf life is 24 months. LactoMax® Prime does not require special transport conditions.
